The decanting
The new wines , Recioto, Amarone and Valpolicella Ripasso are in barrique barrels that can contain
225-300 litre and tonneaux barrels that can contain 500 litres to age.
The Amarone ages in “small wood” for one year, Recioto and Valpolicella Ripasso for a shorter period.
The small barrels, barriques and tonneaux, are used for 4 years. Every year the 25% of the barriques and tonneaux is
replaced: after using them for 4 years, infact, the small barrels are changed and used to decorate the cellars and the
Villa Spinosa garden or given to some friends and guests.
The new wines start to age in barrique and tonneaux.
The wines that were previously in the small barrels are transferred into the
big oak casks to carry on with the ageing process.
The wines there were instead in the big oak casks are decanted into stainless steel tanks:
after having completed the ageing part in wood, they are then bottled.
