August is a very quiet month in the cellar.
There are not, infact, particular works to do: we just monitor the situation.
It is really important to verify that the wine temperature doesn’t go under 18º during the ageing.
We also control the level of the wines inside the barrels: because the heat the wine tents to increase its volume.
In this way there is the risk for the wine to leak out of the tonneaux and filling vases at the top of the oak casks.
