In 2017 Villa Spinosa is going to launch a new research project in the wine cellar managing.
New barrels from nine different suppliers have been purchased.
The research project aims to study "The aging of the Villa Spinosa’s wines in 500 litre French oak barrels".
The first stage of the work involves the comparison among the barrels produced by different suppliers with different wood seasoning.
In the next stages of the research, the technical staff of Villa Spinosa is going to experience the different types of roasting.
"The aim of our project is to understand which is the best kind of wood for our wines:
we want to choose, after experiencing, instead of selecting cooperage, types of wood, seasoning and roasting,
thus purchasing just following the trend in this area," said Enrico Cascella Spinosa who leads the company Jago.
